    Fast Black Beans Cuban Style

    Black Beans Cuban Style

    4 rashers of bacon sliced lengthwise in half then into 1/2 inch strips (for a veggie version use 3 tablespoons olive oil)
    1 cup onion diced very small
    1/2 cup red bell pepper (I loathe cooked green pepper you can use it but red is tastier for this) diced very small
    4 cloves of garlic smashed and ground to a paste
    1 tablespoon tomato paste
    1/4 teaspoon ground coriander seed
    1/2 teaspoon ground cumin seed
    1/2 teaspoon smoked or sweet paprika
    1/2 teaspoon dried mexican oregano
    1/2 teaspoon dried cilantro
    1/2 teaspoon lime zest
    1/2 teaspoon orange zest
    chipotle in adobo as much or as little as you want, you can leave this out if HOT is not for you
    2 cups fully cooked black beans (or 1 15oz can)
    1 cup stock chicken or veggie
    salt and pepper to taste as you add in fresh ingredients
    4 tablespoons fresh chopped cilantro (if on hand not necessary)
    4 tablespoons sliced green onion tops

    Brown the bacon in the pan, removing the meat leaving all the grease. Add in the onion, bell pepper, and garlic, do not brown the mix, sweat the mixture till you can smell it and you will know cause well heaven will start to rise from the pan, then add in everything but the beans and stock. Allow to all the spices to come together, about 5 minutes then add in the beans, mixing well, and pouring the stock over. Do not cover, allow almost all of the stock to cook off. Serve over some good white rice.
