Roast Pork in Mojo
Another great Cuban dish,
1 4lb shoulder pork roast
Zest of 1 lime and 1 orange
3/4 cup orange juice
1/4 cup lime juice
8 cloves of garlic smashed
1 seranno chile (you could use a jalapeno) sliced in half
1/2 teaspoon mexican oregano
1/2 teaspoon cumin
1/2 teaspoon smoked or sweet paprika
Mix all the ingredients and pour over the raw roast allowing it to marinate at least 6 hours overnight even better.
Preheat oven to 425, remove roast from marinate and place in a roasting pan in the middle of the oven, allow to cook for 15 minutes then turn down to 325. Cook until it reaches 150 degrees internally.
In the meanwhile, strain the marinate, and add in 2 cups of pork or chicken or veggie stock, and bring to a boil and reduce by 1/2 for a gravy.
Allow the roast to rest, slice, serve with black beans and rice and a nice cool beverage.
