Pretzels. I was craving salt.
I'm on a poor girl's diet. I ate chorizo con papas burritos. But I added sweet kernel corn. There is nothing like biting into something smushy and spicy and having that sweet pop of corn in your mouth. I'm in heaven!

I made soup. Grilled chicken with tri-colored tortellini, corn, red and green bell peppers, and black beans, in a sweet and spicy chipotle broth.
Too much. I'm going to be awfully sorry tomorrow...
Dark chocolate coconut milk ice cream. Yum! (I might be bad and have a little of the cappuccino variety after. :devil:)

Half a tamale pie because it said I could put it in the toaster over WITH the plastic wrap in the plastic container. But they lied. And it melted. And so I only ate a bit less then half. And some beans I got out of a can that sorta sucked but I ate them anyways. Because it's like midnight and I ain't about to go all The Gourmet Chef at this time of night. So now I'm eating sugar free chocolate pudding.
This was my birthday dinner. It sucked.

Not eating right at this moment, but I have some thin slices of pork in the oven slow cooking in a mixture of mesquite seasoning, garlic, black pepper, horseradish mustard, teriyaki sauce, onions, cumin, and chili powder.
So I'm off vacation. So it's back to eating home cooked meals. Being that I'm poor...I got stuff for spaghetti! All week. Well that and some other dinner options. But pretty much I'm eating spaghetti for the next 3 days because I'm working 11 hours days. So it's easier that it's all ready. Just heat and eat. But I did splurge. I got a container of freshly shredded Parmesan cheese. OMG. This makes my pasta AMAZING!

I made couscous with spinach.
Also, I put the soup I made last week through the blender with an avacado, and mmmmm...creamy gazpacho-like soup (ya know, except that its not raw)
Veggies in sun-dried tomato sauce and a banana/cocoa/peanut butter pudding. :)

No pun intended...
We are actually going to dinner Saturday....AND...the toll thing is figured out, it just needs to be implemented, which will take about 2-3 weeks. But hopefully, by January 1, all our bills will be paid off (including credit cards), with the exception of utilities and one car. The gov't has a 401K type deal that isn't a 401K, and you can take a personal loan from it and pay yourself back with 2.something or other % interest (. So...I can use my own money to pay my bills and then pay myself back... seems better than continuing to pay bills accruing interest.

I got an unexpected package in the mail - my aunt sent me BAGELS FROM JERSEY!!!! I'm in heaven and fat city!
Cheese wienees and home made potato salad with tajin. Mind you I made the potato salad from 1 potato and 2 eggs, olives and mayo. I've had 1/4 maybe of the potato salad and I feel like I'm about to explode! Good night.

Hoping that includes some sour cream,and bacon bits...That is what works for me with a baked potato.
Baked salmon and mashed yams with milled flaxseed topping. Filling and satisfying.
Cheese and red onion bagel (bought on a whim just to try it - kind of strange!), a Christmas Pud flavoured Nak'd Bar and three satsumas. :)

Nachos. As a helpful tip, don't be a cheapass and buy Velveeta instead of proper nacho cheese. It's tolerable, but not great.
Eggs. I did have tuna, onions and mushrooms for tea earlier. And Prosecco, as it's Hogmanay. :D

I made a pouch out of aluminum foil and filled it with cubed potato pieces, onions, spinach, mini pepper pieces, and topped it with nacho cheese and paprika. Cooked at 450 for an hour and ate; it was delicious :)
Not much other than onion bhajis today... not terribly healthy!

home made sloppy joes. Ok, it's Manwich. But after I take my time and really grind down the beef with my wooden fork for 20 minutes, cover it in cheese, nuke the bun in the microwave and eat it with mac and cheese..it's amazing!

Went to a diner that's been here in Bethesda since the 30's...we generally have dinner there when we visit the NIH for this study we are doing... I had their beef tips with noodles and steamed broccoli and carrot cake. Anyhow...so excited because tomorrow is chicken and dumplings for the special!!!

Cooked a burrito in the oven a bit too long, so I had to soak it in some hot sauce for a little bit then I threw some sour cream and refried beans on top to balance out the added spice.
Too bad I didn't have any guacamole or spanish rice, but it turned out well I'd say.

Fried tastes delicious while you're eating it, but afterwards, my stomach always feels yucky and heavy...
This just sort of fries the outside a little bit and leaves the inside potato like; I love it!

That looks good, and I agree about fried foods. "Real" eggplant parm is made with olive oil, which is better than others, but eggplant is like a sponge, and you use a ridiculous amount of oil! I've made it in a casserole dish with little to no oil and it comes out just fine - you bread the eggplant slices, bake them, layer with ricotta & tomato sauce & mozzarella , top with parmesan, and bake until the cheese is ready. You just use oil to grease the pan!

Google "baked eggplant parm" - there are lots of recipies, all pretty similar - make to your own taste! The marinara sauce recipe I use is:
2 teasp. Olive oil
1 shallot, diced
1 28 oz. can crushed tomatoes
1/4 teasp. (or to taste) crushed red pepper flakes
a couple pinches of salt
2 heaping tablespoons each of finely chopped fresh basil and parsley
In medium pot over medium heat, warm the olive oil. Add shallots, saute a few minutes until translucent. Add tomatoes, red pepper flakes, and salt. Stir, reduce heat, lightly bubble for 8-10 minutes, turn off heat, stir in herbs.

If we can just change the ketchup for ranch or chipotle mayo I'd totally be down!! I am sure ketchup is healthier than either of my options but they look great. I love potatoes.

So because of all the food polls tonight I had chicken and leek pot stickers a white rice with brown sugar and butter. I know they don't seem to go together but it hit the spot!

It's a crap day of food. For work break I had churros. My boss left (it was his last day) as soon as I got in. So I couldn't leave the store. I sent the new guy out for me. And dinner was meh. I had a Souper Meal Top Ramen. And I paid $5 for a package of yummy sliced watermelon. Washed it down with a diet coke and I'm off to bed. meep
Coffee with cinnamon creamer and an apple turnover.
Last night top ramen. Guess what tonight is? Top Ramen. I don't want to eat heavy at 10pm. Plus I'm going to be eating faire food!

See, that's a good lookin' slice of pizza. Wicked thin, small crust, a good sized piece, just enough spices and cheese on it ... Of course, I'm slightly biased and I've not really found very many good pizzas outside of the Connecticut/New York area. Even going a little north to Massachusetts, they can't seem to be able to get it right either. They had done a study/taste test and have discovered that the main ingredient that sets various regional pizzas apart isn't the cheese, or the toppings, or the spices. It's actually the WATER used to making the dough! They took the EXACT same ingredients but then used water from different parts of the country, then set out the pies for blind tasting. Folks from whatever area the water came from were able to pick out which slice came from their hometown H2O!
Now as for me and food for today, I dunno. Probably going to be leftovers, lime salt seasoned tortilla chips, and some iced red tea I just finished brewing.

I know it's sort of mutated looking, but they're homemade cookies. Peanut butter blueberry cookies with strawberry thumbprints, to be exact.. And, believe it or not, they were made with instant blueberry pancake mix!

I have to fast for 12 hours. Blood work tomorrow. Of course I'm no longer caring to be honest. I mean the fasting is just to see what my fasting number is. Regardless of what I eat, the A1C test is for the last 3 months. So it's really hard to fast when you have to work and ride a bike home.
I'm eating a plate of raspberries, green olives and some walnuts with a Diet coke. This stuff is good!

I had ground beef mixed with zucchini, kale, green peppers, onions, some garlic and eggs. It was yummy!
Just had such a nice lunch at work. Nothing special, or particularly different, but for some reason I really enjoyed it. It was spinach, plumb tomatoes, cucumber, chicpeas (slightly undercooked, because I'm lazy), and pasta. Little bit of mayo and black pepper. I don't usually use mayo, but there's no pesto left at work, and I didn't want to eat it dry. I guess I'll have to start having mayo a bit more often then!

I've been playing with IF (intermittent fasting) for the last couple of days. I always wake up starving, eat breakfast, and then I feel hungry again by 10am. And then eat lunch, and then a snack, and then dinner, and well...that's a lot of food.
So I have been playing with a 16-8 IF window. And so far...I'm actually only hungry in the morning for like 10 minutes when I first wake up, and then I'm fine until 11-12. And it makes lunch taste GREAT. Like the best thing ever. And I've been able to keep my calorie goals this way (aka no mindless snacking anymore).
So what did I have for breakfast? Nothing. And it's fantastic. (but I had blackened pickerel, homemade fries, coleslaw, and long island ice teas for dinner, and that was fantastic too!)

Gooseberries. My plants seem to have ripened since this morning, so I'll be eating a lot of them for the next week or so. I don't know why more people don't plant these....they taste great and they produce a tonnnneee of fruit.

So the last three days have been heaven for me!!! KP has been off work for over a week and has another week of vacation to go which means hes bored out of his mind and has been making me dinner, which normally only happens once every couple of months. So first night was a play on gyros on fresh tortillas cause hey who doesn't love fresh tortillas??? Yesterday I had home made rubens, and instead of sauerkraut we had sauteed cabbage and bacon with homemade dressing. I only had to toast the bread while he assembled. And this evening it was a tortellini chicken soup. With plenty of left over chicken to make quesadillas the next few days with our extra tortillas.
I'm gonna hate it when he goes back to work.
Toast and an avocado/tomato salad.

Dinner smoothie for me and hubby: One cucumber, one cup spinach, one celery rib, the juice of one key lime, one carrot, half a small sweet potato, half an avocado, and about 1/2 a cup of yellow grape tomatoes....plus garlic, paprika, red pepper, and some salt to season it up.

An order of nachos and 4 orders of jalapenos. The jalapenos there are those movie theater nacho style. Sorta sweet to be honest. I can eat them like pickles!

Today I decided to risk my life and kidneys by eating lobster mushrooms...
It has a color similar to cooked lobster meat or lobster shell and can have a seafood-like aroma when cooking. It is actually an example of a mold attacking a mushroom. Hypomyces lactifluorum attacks and parasitizes Lactarius piperatus or Russula brevipes and covers the entire fruit body with an orange skin. Lactarius piperatus has a peppery flavor that is improved by Hypomyces. Russula, which is very crumbly, becomes dense and less breakable. (http://mushroom-collecting.com/mushroomlobster.html)
The danger is that there has been some speculation that the mold could infest mushrooms of the dangerous Amanita variety. Since the mold also distorts the shape of the mushrooms, positive identification of the host mushroom is problematic.
However, Aminitas are not currently in season, but Lactarious are all over, so, using due care, I am partaking...
If I'm wrong, give me three days till emergency room time.
But they are delicious! Sautéed in butter, a sprinkle of salt, and a liberal squeeze of lemon.

Not currently, but earlier today. My wife and I went to a local fish market that has a little counter and a deep fryer where you can get fresh cooked, fresh fish. We made massive pigs out of ourselves with fried oysters, scallops, and a soft shelled crab, as well as generous portions of chips and New England clam chowder. Everything was sooo good. On the way home we stopped to get frozen yogurt.

Family size in itself is a joke. Unless of course, the "family" they mean is just me. I don't mind it so much every once in a while. Grab a loaf of bread, the entire family size package, and that's good for one meal.

We went to a place today my folks have been raving about for years, but I never got around to it. So today, before my wife had to head back to Canada, they took us there. She had lobster ravioli, topped with shrimp, lobster meat, mussels, and scallops, and the whole thing was sauced with a shrimp bisque. I had rock shrimp and sweet pea risotto, with medium rare grilled steak tips.
Salad. There's some crab in the fridge I'm kind of interested in, but that may wait until tomorrow.
