    I have to agree with cabbage. Overall, it's my grab and go green stuff, and like B. De said, so useful. Though, last weekend I made collard greens for the first time with crumbled bacon, onion, and mushrooms.

    Or, of course, you can simply roll up a mixture of rice, pork, and ground beef into those cabbage leaves, toss them into the oven with a sour cream tomato sauce, and then enjoy the hell out of it. Golabki. Yummm.

    Try that exact dish again, but add parsnips and potatoes, and swap the brown sugar for honey. Ancient norse dish - straight from the frying pan to your stomach! (the dish I'm used to isn't spicy though - but everything should be)

    Cabbage. Just plain ol' cabbage cabbage.

    Sauerkraut, stir-fry (much cheaper than bok choy, pennies compared to dollars, same effect), soup, coleslaw, salad, so multi-purpose there is always one in the fridge.

    Spinach comes in a close second, but is more of a luxury item in the house.
