So here I am, once again. Not as strong as when I started. But I ain't giving up! I had 3 days off this week. 3 days of pizza. I over did it! Shame shame. Oh well.

Still...on to things that worked.
~cantaloupe. I think I mentioned that last time. Oh yeah. It's filling
~lemons. I eat a lot of lemons. It keeps me busy I guess.
~potatoes cooked in the microwave. Omg. If you leave them whole, put them in a sammy bag and nuke a big one for 4.5 minutes? You get crispy skin and super smooth soft tater insides. I put this in my chorizo, skin and all. It's wonderful.

Things that did not work:
~cottage cheese cups, I'm giving you away to people at work that will love you. Because I don't. Sorry.Not sorry.
~I need to make sure I prep before work or else I'm stuck eating a muffin. Shame shame for procrastination.


Things to celebrate?
I have mastered (somewhat passable ) mexican rice! I bought a big bag of rice for like $1.38. I do 1 cup rice, 2 cups water (the water also has half a cup of low sodium tomato sauce). Brown rice and finely diced onions in skillet. Add garlic powder, salt and pepper and boil then simmer 20 minutes. At first I thought maybe the rice was still too al dente. But after heating it in the microwave for lunch (with a tablespoon of water) I found it was actually good and startchy and yummy. I think I still need to maybe add an additional 1/4 cup of water since it pretty much all soaked up in about 15 minutes. So I think that little extra will help. But all in all I have rice as a side for a few days on the dirt cheap (plus I add Tapatio to the rice. Omg soo good). I'll never mast my mother's version since she never measured (Satan bless her heart!).

Meals planned for next week:
bbq chicken breast tenders sliced
papas and chorizo
beef and cheese empenadas

mexican rice
potato salad
bbq baked beans
corn? (gotta experiment in the microwave)

popcorn, cucumbers with lemon, fruit, low sugar applesauce,oatmeal, chocolate diabetic shakes (got a coupon for Glucerna to try out)
