        Huh. The caramelized onion fascinates me. I love onion. But does it really help with the heat? I like the taste of buffalo, but the heat hits me hard.

          It helps somewhat, but the best way to handle heat starts with your pepper sauce. You can always make something spicier, but it is really hard to curb heat without messing up the flavor profile. Your ingredients are better served in adding flavour, not covering up other flavours.

          Ancho, guajillo, and jalapeno are all milder and still make a good sauce and can be found in most supermarkets in both premade sauce and fresh pepper form. If the flavor drifts too far from classic buffalo, you could always mix in some dried cayenne to taste.

          Making the sauce yourself is probably your best bet when it comes to heat management.

          The biggest flavours at play are the butter and the vinegar. So you could start with a base of caramelized onion and butter sauce, a splash of vinegar, then bring in the heat as much or is little as you want. Remember that most of the heat is in the seeds.

          Then it's just a matter of finding the right consistency.

            I agree with Denarius.

            I'd also like to mention the, previously stated, honey, again. Instead of 'masking the burn', add a tiny bit more sweet to it. It's a trick I used to do when making my own BBQ sauce or baste. It still maintains the bite, the afterburn, and the flames in the back blast the next day, but it also triggers the sweetness sensors in the mouth, real nicely, when you get the mix right. Anecdotal responses went from something like "I can't eat this!" to, "Damn, this is HOT but it is SOOOO good! Is there any left??"

            Then again, I'm always open to experimentation.

                  Thinking why are there so MANY thunder storms in Jersey in the summer now? Used to be maybe 2 storms a month at the most,now its 2-3 storms a WEEK...I might want to go to adult rants for my true feelings on this.

                    Remember when every year around Labor Day, there'd be a hot humid day, then a huge t-storm, and the air would suddenly clear and temps would drop and you could smell Fall coming in? Now it's all different.

                      I know right? I actually really like thunderstorms, and they've only lasted an hour max each but it's so weird.

                          "Small" is relative. I stand at 5'4" (or about 163cm). Until I got married, I generally weighed around 118lbs (54kg) - regardless of what I ate, how much I ate, I never went more than about 3 or 4 pounds over that and I always returned to that same weight - for 20 years, that's what I weighed. Then I got married and gained 70-80lbs, or about 35kg - over the course of 10 years. A combination of natural metabolism changes and a daily caloric intake better (more) than 3 times the recommended daily values.

                          So, very short and, now, rather....rotund. IMO, anyway.

                            I'm thinking about the progress I've made in these last couple of weeks in my journey of personal growth. I sit back now and I'm floored with the progress that has been made. It's giving me all the more motivation to continue doing what I need to do.
